If there’s one way of brewing that I will come back to is definitely the “Moka”. I’ve got plenty of coffee appliances ranging from a semi-professional espresso machine to V60, a Rok, etc. BUT. The Moka. The smell and its unique taste and richness is unique.
Over the years for brewing coffee with my Bialetti (Brikka 2!), I could experiment and try to improve my cup of coffee.
And it took just one simple tip that a barista told me about.
Good news, you probably have everything ready in your kitchen.
A kettle. Yes, that’s it!
Rather than starting from cold water, you simply boil it beforehand. Just be careful when you add it to the Moka pot, add the filter and seal it, it will be extremely hot! Use a towel. Also, but you probably know already, make sure no ground coffee is left on the rim. Just clean the ground coffee filter with your hand before dropping it in the Moka.
This way, the coffee will start brewing almost instantly. The less heat is applied to the ground coffee, the best it will keep its taste. Simple as that!
I have another very simple trick to shorten the brewing time even more. My stove-top is a halogen one and takes quite a little bit of time to heat up to the right temperature. So what I do is pre-heat it: I set it to the maximum heat for around a minute (while the water boils, for example). Be careful not to burn yourself though!
